Here’s a fast and easy appetizer that’s perfect to offer with a glass of wine or champagne for that last-minute visitor! I decided to make these on the spur of the moment last summer - it was a warm evening, perfect for a drink outside, but we had nothing to munch on. Surprisingly, these turned out to be a great finger food, and the baked bacon gave them a little extra pizzaz!
Mini Filo Shells
A few pieces of cubed bacon, pancetta or prosciutto
Pre-heat your oven to 350ºF.
Fill the Fillo Shells with the Spinach and Feta spread.
Add a couple cubes of bacon or pancetta or prosciutto on each shell.
Bake for 15-20 minutes or until the bacon is golden brown.
Cool for 5 minutes and enjoy warm!
