We are all about tasty and healthy food here at Zelos. At the same time, we are all about time-saving tips, too, because, even though we foodies, love our gourmet flavors, no one wants to slave in the kitchen all the time!
Remember the festive Greek Easter menu that I shared a few weeks ago? Well, it was a menu for two and if you made it, you probably ended up with half a jar of Elli & Manos Tomato and Thyme sitting in your fridge. As promised then, this is the recipe to create a nice shareable appetizer that will for sure become a conversation starter. You can prepare it with Tomato and Thyme or any other Elli & Manos tomato-based spread.
What I like about this jelly is that Elli & Manos already took care of the authentic flavor that is so needed when you do a tomato jelly. You only have to dilute it to the right balance and add the gelatin! And here is how:
1 tsp unflavored gelatin
1/2 cup water, divided in half
Fill your half-empty jar with water, shake it up to blend, and pour into a bowl.
Sprinkle a tsp of gelatin into 1/4 c. of water in a medium-sized bowl and let it sit for 5min.
Warm the other 1/4 cup of water and stir into the gelatin mix until it dissolves.
Mix in the tomato sauce and pour into a mold.
Refrigerate for 3-4 hours, preferably overnight.
Before serving, dip your mold in warm water for approximately 5-10 seconds, lift and shake to loosen the gelatin. Cover with a plate and flip it over to serve.
You can enjoy this tomato jelly with all kinds of cheeses. We love it with white cheeses such as mozzarella, ricotta, feta or goat cheese. Add a drizzle of extra virgin olive oil and let your mind travel to Greece!
