Bergamot is a unique citrus fruit which many know from the oil that infuses Earl Grey tea. It is said that bergamot is the result of a hybrid of lemon and bitter orange, which may explain its unique bittersweet flavor. This traditional dessert is handmade on the Greek island of Chios, famous for the citrus fruits brought centuries ago by the Venetians. Pieces of bergamot peel float in a simple syrup of sugar, lemon juice and water - no preservatives or additives at all, just simple island sweetness.
