Andros is the nearest Cycladic island to Athens and it literally has it all! Amazing nature, wonderful beaches, great taverns with fresh food, traditional villages, and a luxurious main town for your evening strolls.
Andros Gastronomy: Andros is famous for three reasons: for being the isle of captains in Greece, for its spoon sweets, and for its unique local dish calledfroutália - an omelet, with potatoes and sausages that will fill up your tummy and your soul.
3 sausages
3 potatoes, peeled and cut into thin slices 1 cup grated cheese (we prefer mizithra with kefalotyri)
1/2 cup milk
8 eggs,
1/2 bunch of parsley, finely chopped or 1 tsp of Greek Salad Spice Mix from Sparoza
Salt and pepper
Tragano Greek Organics Olive Oil for frying
Heat 2-3 tsp olive oil in a pan and cook the sausages for 5-6 minutes.
Remove from the pan and keep them in a baking dish.
Preheat the oven (350-degree).
Add some more olive oil and fry the potatoes.
Add potatoes to the baking dish.
In a large bowl, beat the eggs. Then add the milk and all other ingredients. Beat until well combined and then pour into the baking dish.
Bake for about 40 minutes. Enjoy!
